2006 Savignon Blanc
Chameleon Cellars is changing colors and added our first white wine ever in 2006. The second version of SB 2005 is awarded as good as its predecessor – perhaps better! Its fruit is lush and aromatic beautiful are entirely consistent with our philosophy that all wines must be labeled by the grape it represents and to provide a lively acidity and refreshing palate.
This variety has long been prized for its ability to improve a wide range of variety light food, and our 2005 version is no exception. Grapes from Mendocino, Lake and Sonoma counties with 7% Verdelho from Lodi. All stainless fresh own very aromatic wine with hints of mango and grapefruit will blend beautifully with a snapper lightly grilled or sauteed chicken and a Roasted rosemary infused ravioli with goat cheese or coconut shrimp.
If absolutely perfect for immediate consumption, this lovely wine is both the depth of fruit and tangy acidity required for some extra bottles age.

Cabernet Sauvignon – the main grape variety Red
Cabernet Sauvignon as being a bit difficult because there are many myths and conjectures surrounding. The word "Sauvignon" seems to have been derived from the French word wild, which means wild. Reference is made to the vine Vitis vinifera is a native wild vine in France. The grapes used to be rumored to have ancient origins.
During the past century, Cabernet Sauvignon has become very popular as one of the most beautiful grapes in the wine world. Its popularity is partly built on the success in Bordeaux, as well as regions such as California and Australia. Planting vines in a region that can be cultivated, it is considered a good choice. Cabernet has become a familiar wine among consumers, who also helped to its availability and appeal, even wine regions and producers waves.
In California, Cabernet Sauvignon has a certain style reputation and recognized by the world market. plantations in California and grape production are similar to those of the quantity of Bordeaux. In the years 80, the phylloxera epidemic invaded California, demolishing most of the vineyards that would later require replanting. There was also speculation the Cabernet Sauvignon were planted with other varieties. Plantations Cabernet Sauvignon, actually doubled between 88 and 98. Most wine regions have been dominated by the grapes, the Napa Valley north of Yountville Alexander Valley and Sonoma.
Cabernet Sauvignon is grown in almost all countries of South America, including Chile, Argentina, Peru and Uruguay. In Chile, the wines have historically been limited by the exceptionally high returns that were common throughout the country. "As producers began to focus on limiting yields, regional differences began to emerge that distinguished Chilean Cabernets. "The climate of the region is the most important factor for planting vineyards along the river valley flat, the soil type is a greater concern as plantations at higher elevations and along the hillsides, "The wines of the region of Aconcagua are known for their ripe fruit, but closed structure tight that needs some time in the bottle to expand. "

The pleasure of wine as a hobby
Less intense than golf or gardening, tastes better than the backs of old postage stamps, and a little more fragrant than any other misuse of Head Fishing is the hobby of wine-.
Few other occupations offer as many very different types of pleasure. It varies from growing your own vineyard to make your own wine, you can visit the land of wine in the world, build a wine cellar and collect the old labels, fancy glasses, and test your palate by tasting you can even find sets of coasters ceramic or stone coasters match your glasses and in harmony with your choice of wine.
Wine marries well with food. All heads are rated fans and lovers of wine, because requirements of haute cuisine wine both as seasoning and as an accompaniment to the table. As for literature, some types of reading offers more fun for the sense that the memories of memorable meals cleverly mixed with a great vintage. Wine Library contains all the history of civilization.
Wine lovers will experience the joys subtle. He sees his wine's bright sky over hillside vineyard, it sucks the essence of the campaign, he enjoys her bouquet, he admired as a work of art, and helps instill the sun in his veins. Nothing in this section is intended to denigrate Arts greater appreciation of wine. While most wines of the world, reached their maximum in the quality beginning, and then decline, some red wines, a little white, and a significant proportion of the sherry and dessert wine to develop a high standard with many years in their bottles.
The extent of improvement in the glass-after maturation in barrels before-can be compared to the difference between stoneware coasters simply planed and sanded the same stone, or the difference between a rose bud and flower.
But the selection of wines requires a study. Many leading producers of Bordeaux, once known for the longevity of their famous wine-vintages to live a half-century or more, have changed their production in recent years for lighter wines before maturity.
Same Napa Valley Cabernet Sauvignon, of which there are magnificent examples of nearly fifty years, are even lighter and earlier than before, making the wine off the skin of the grapes before fermentation is complete.
One reason for this is apparent to modern consumer tastes fresher taste, of lighter bodied wine than before. Another is that growers have become aware that retailers can not afford to keep stocks for many years before the sale.
The producers of premium California wines generally store their bins in the basement for a few months to a year after the implementation bottle, just to take off rough edges, they say. But binning is costly in terms of space, handling, and wait for the proceeds of the sale. Only householder can reasonably expect to buy wines in the special purpose of aging in bottle.
